The variety of wheat they use is hard red spring wheat, which is from Robbins Farm in Sackets Harbor, NY. The wheat is harvested mostly during early summer. The flour is stone ground and they mill with 30 inch stones at an 85-90% extraction rate. They add no preservatives or enrichment to the flour, and it is unbleached. They mill at cool temperatures, so there is no burning out of the nutrient value in the grain. The freshness is above and beyond that of roller mills.
