Brie and Asparagus Tart

Makes 8 servings – Pastry/Appetizer – 45 minutes

1/2 wheel of Sprout Creek Margie Cheese
1 bunch Asparagus
1/2 pkg. HVH Sliced Bacon
1/2 Lemon, juice
Puff pastry
1 Egg
Salt and Pepper

Preheat oven to 425 degrees.

Cut off ends of asparagus and cut bacon into 1/4″ thick strips.

Cook bacon, rendering as much fat as possible. Cook asparagus in bacon drippings for about five minutes. Remove from pan and season with S&P and lemon juice.

Cut cheese into thin strips.

Lay out pastry on parchment lined baking sheet. cut border around pastry not completely through. Whisk and brush an egg over the edges.

Arrange cheese, followed by asparagus and bacon.

Bake for 20 mins or until the pastry is browned and cheese is melted. Cut into eight pieces and serve.
