Chive Blossom Potato Salad
Makes 8 servings – Side Dish – 1 hour 30 minutes
5 lbs. Goose Island Potatoes, cut into 1/2” pieces
1/4 c. Miller & Sons Orchard Apple Cider Vinegar
3/4 c. Olive Oil
Salt and Pepper
1/4 c. Blooming Hill Farm Chives (with blossoms removed), minced
1/2 Lemon, juiced
1 tbsp. HVH Honey
1 tbsp. Honey or Dijon Mustard
In a large pot of water, heat and boil potatoes until tender.
Whisk together honey, lemon juice, mustard, olive oil, vinegar, chives, salt and pepper for vinaigrette. Heat vinaigrette in a saucepan over medium heat until warm.
Pour over potatoes and mix until coated. Sprinkle chive blossoms over warm potatoes and chill for 2-3 hours. Taste and adjust seasoning if needed.
