Kale and Corn Succotash
Makes 3-4 servings – Sides/Vegetables
2 packages Hudson Valley Harvest Frozen Kale
1 package Hudson Valley Harvest Frozen Corn
1 Bottle Hudson Valley Harvest “Honestly Ugly” Heirloom Tomato Juice
Combine kale and tomato juice in sauté pan with lid, and add 1/4 cup water. Bring just to a simmer, season with salt & pepper. Cover and braise for 15 minutes, until kale is silky and broth is reduced. Add corn, stir to combine, cover and braise for 5 more minutes. Serve with crusty bread and a poached egg on top.
